Orange Tahini Digestives

I love digestives and have been missing them since I’ve changed my diet to plant-based and gluten free. For the last couple of weeks I been testing different recipes, experimenting with different flavours and here they are! Their texture is great, they are low in sugar and the flavours work perfectly together. Can’t stop eating them!
Ingredients
9-10 cookies
dry ingredients:
- 70g rice flour
- 70g ground almonds
- 1/2 tsp bicarbonate of soda
- 1/4 tsp himalayan salt
- 4 tbsp coconut sugar
wet ingredients:
- 40g coconut yogurt
- 30g tahini
- 30g melted coconut oil
- 1tbsp orange blossom water
- zest of an orange (organic)
to decorate:
- 70% dark chocolate
- sesame seeds
Method
Preheat your oven to 180°C fan setting.
In separate bowls, mix the dry and wet ingredients making sure they all combine well.
Pour the wet ingredients in the dry ingredients bowl and mix with your hands until you get a dough.
Roll out the dough using a rolling pin. You want the dough to be around 1/2cm thick.
Cut into shapes using a cookie cutter or the rim of a glass and place on a baking tray covered with a baking sheet.
Repeat until there is no dough left.
Bake for 12-15 min (depending on your oven).
Let the cookies cool down.
In a saucepan, melt the dark chocolate and dip a part of each cookie.
Sprinkle with sesame seeds and let it cool down before eating.
