Caraway & Orange Blossom Banana Bread

I love a slice of banana bread for breakfast. I’ve been testing this recipe for a while and I’m finally happy with the taste and texture. It’s plant-based and gluten free. I’ve flavoured it with caraway seeds and orange blossom, added some walnuts for some crunch, you can also add some dark chocolate to make it even more yummy! Hope you’ll enjoy!

 

Ingredients

1 loaf

dry ingredients:

  • 150g buckwheat flour
    (or oat flour)
  • 150g rice flour
  • 100g ground almonds
  • 100g coconut sugar
  • 1tsp bicarbonate of soda
  • 1tsp baking powder
  • 1tsp cinnamon
  • 1tbsp carvi seeds
  • pinch of salt

 

wet ingredients:

  • 70g coconut oil melted
  • 100ml almond milk
  • 4 ripe bananas
    + 1 to decorate (optional)
  • 1 tbsp flax seed
  • 1 tbsp orange blossom

 

extras: 

  • chopped walnuts
  • dark chocolate (optional)

 

Method

Preheat the oven to 180°C.

Mixed the wet and dry ingredients separately, then combine.

Add the chopped walnuts and dark chocolate if you are using some. Mix again.

Pour into a baking tin covered with baking paper if needed.

Bake for around 40 min and voilà!
